1/2 cup brown rice flour
1/4 cup tapioca flour
1/4 cup sorghum flour
3/4 cup sugar
1/4 teaspoon xanthan gum
1 tsp baking soda
1 egg
2 mashed ripe bananas (about 1/2 cup)
1/4 cup crushed walnuts
6 oz. cup of lemon flavored soy yogurt
Mix dry ingredients and add wet ingredients mixing until completely combined. Pour into greased loaf pan and bake at 350 for 45 minutes or until a toothpick inserted in the middle comes out clean.
